Roast the Beets
Preheat your oven to 400°F (200°C). In a baking dish, create a bed of coarse sea salt and place the beets on top. Cover the beets with more salt, ensuring they are completely coated. Bake for about 45-60 minutes or until a fork easily pierces through the beets. Remove from the oven and let cool.

Prepare the Burrata
Once the beets are cool, peel the skin off and slice them into wedges. Arrange the slices on a serving plate. Tear the burrata cheese and place it strategically among the beets.

Prepare the Pears
Slice the pears into thin wedges and scatter them around the beets and burrata.

Garnish
Sprinkle the pomegranate seeds over the dish, followed by the walnut granola. Drizzle with olive oil and season with fresh thyme and black pepper to taste.
