    Prepare the Bone Marrow Herb Butter

    In a bowl, combine bone marrow, unsalted butter, chopped parsley, and chopped thyme. Mix until well combined and season with salt and pepper. Place the mixture on a sheet of parchment paper, roll into a log, and refrigerate until firm.

    Prepare the Fries

    Peel and cut the potatoes into fries. Rinse in cold water and pat dry. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt immediately.

    Cook the Hanger Steak

    Season the hanger steak generously with salt and black pepper. Heat a skillet over high heat and add a little oil. Sear the steak for 3-4 minutes on each side for medium-rare, or until desired doneness. Let rest for 5 minutes before slicing.

    Plate the Dish

    Slice the steak and serve it on a plate topped with a slice of the bone marrow herb butter. Drizzle A26 steak sauce over the steak and serve with a side of house-cut fries.
