    Boil the Eggs

    Place the eggs in a saucepan and cover them with water. Bring to a boil over medium heat, then cover and remove from heat. Let sit for 12 minutes.

    Prepare the Eggs

    After 12 minutes, transfer the eggs to a bowl of ice water to cool. Once cooled, peel the eggs and slice them in half lengthwise.

    Make the Filling

    In a bowl, scoop out the yolks and mash them with mayonnaise, Dijon mustard, salt, and pepper until smooth.

    Add Bacon and Onions

    Chop the cooked bacon and add it along with the pickled red onion to the yolk mixture. Mix well.

    Fill the Eggs

    Spoon or pipe the yolk mixture back into the egg whites.

    Garnish and Serve

    Sprinkle the filled eggs with smoked paprika and top with chopped chives. Serve immediately or refrigerate until ready to serve.
