For the Seared Sea Scallops

    Prepare the Scallops

    Pat the sea scallops dry with a paper towel to remove excess moisture. This helps achieve a good sear.

    Season the Scallops

    Sprinkle the scallops with salt and black pepper on both sides.

    Heat the Pan

    In a large skillet, heat the olive oil over medium-high heat until shimmering.

    Sear the Scallops

    Add the scallops to the pan in a single layer, making sure not to overcrowd them. Sear for about 2-3 minutes on each side until golden brown. A crust should form on the outside.

    Add Garlic and Butter

    In the last minute of cooking, add the butter and minced garlic to the pan. Baste the scallops with the melted butter and garlic for added flavor.

    Remove from Heat

    Once cooked, remove the scallops from the pan and set aside on a warm plate.

For the Mushroom Mélange Risotto

    Prepare the Broth

    In a saucepan, heat the chicken or vegetable broth over medium heat and keep it warm.

    Cook the Mushrooms

    In a separate large pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped shallots and cook until translucent, about 2-3 minutes. Add the mixed mushrooms and cook until softened, about 5 minutes. Season with salt and pepper. Remove from pot and set aside.

    Toast the Rice

    In the same pot, add the Arborio rice and toast for 1-2 minutes, stirring constantly.

    Deglaze with Wine

    Pour in the white wine and cook until it is mostly absorbed by the rice, stirring frequently.

    Add Broth Gradually

    Start adding the warm broth, one ladle at a time, stirring frequently until it is absorbed. Repeat until the rice is creamy and al dente, about 18-20 minutes.

    Finish the Risotto

    Stir in the cooked mushrooms, butter, and Parmesan cheese until everything is well combined. Adjust seasoning with salt and pepper to taste.
