For the Rubbed Skirt Steak

Prepare the Skirt Steak
In a bowl, combine paprika, garlic powder, onion powder, brown sugar, salt, and black pepper. Rub this mixture all over the skirt steak. Drizzle olive oil over the steak and let it marinate for at least 30 minutes.

For the Chimichurri

Make the Chimichurri
In a food processor, combine parsley, cilantro, garlic, red wine vinegar, olive oil, red pepper flakes, and salt. Blend until smooth. Adjust seasoning to taste and set aside.

For the Brussels Sprouts

Roast the Brussels Sprouts
Preheat the oven to 400°F (200°C). Trim and halve the Brussels sprouts. Toss them with olive oil, salt, and pepper. Spread them on a baking sheet and roast for about 20-25 minutes, until they are crispy and golden brown.
For the Cilantro-Lime Rice

Stir in the chopped cilantro, lime juice, and salt to taste into the cooked rice.
