Beer-Braised Corned Beef

Beer-Braised Corned Beef

    Prepare the Ingredients

    Begin by placing the corned beef brisket in a large pot. Add the sliced onion, minced garlic, bay leaves, black peppercorns, beer, and beef broth.

    Braise the Corned Beef

    Cover the pot and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for about 3 hours, or until the meat is tender and easily shreds with a fork.

    Shred the Beef

    After braising, remove the corned beef from the pot and let it rest for 10-15 minutes. Shred the beef using two forks and set aside, keeping it warm.

Sandwich Assembly

    Toast the Bread

    While the beef is resting, preheat a skillet or griddle over medium heat. Lightly butter one side of each slice of marbled rye bread.

    Assemble the Sandwich

    On the unbuttered side of half the slices, layer the shredded beer-braised corned beef, drained sauerkraut, Swiss cheese, and provolone cheese. Top with the remaining bread slices, buttered side up.

    Place the sandwiches on the skillet and grill for about 4-5 minutes on each side, or until the bread is golden brown and the cheese is melted. Remove from the skillet and cut in half.

    While the sandwiches are grilling, bake the frozen French fries according to the package instructions until crispy.
