Method

Cooking Pasta

    Boil Water

    In a large pot, bring 4-6 cups of salted water to a rolling boil.

    Cook Pasta

    Add the spaghetti or fettuccine to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

    Drain Pasta

    Once cooked, reserve about 1/2 cup of the pasta water, then drain the pasta and set aside.

Preparing Vegetables

    Chop Vegetables

    While the pasta cooks, wash and chop the zucchini, bell pepper, and carrot into bite-sized pieces. Halve the cherry tomatoes and mince the garlic.

    Sauté Vegetables

    In a large skillet over medium heat, heat the olive oil. Add the garlic and sauté for about 1 minute until fragrant, then add the chopped vegetables and cook for about 5-7 minutes until they are tender but still crisp.

Combining and Serving

    Mix Pasta and Vegetables

    Add the drained pasta to the skillet with the sautéed vegetables. Stir in the fresh spinach and toss everything together, adding reserved pasta water as needed to create a light sauce.

    Add Sauce Ingredients

    Drizzle the lemon juice over the pasta, sprinkle with Parmesan cheese, and season with black pepper to taste. Toss to combine.

    Serve

    Serve immediately, garnished with additional Parmesan cheese if desired.
