Focaccia Bread

Prepare the Dough
In a large bowl, combine warm water and yeast. Let it sit for about 5 minutes until frothy. Add olive oil, salt, and half the flour. Mix until combined.

Knead the Dough
Gradually add the remaining flour while kneading the dough until smooth and elastic, about 8-10 minutes.

Let it Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.

Shape and Bake
Preheat the oven to 425°F (220°C). Punch down the dough and spread it out on a greased baking sheet. Top with rosemary, Parmesan cheese, and drizzle with olive oil. Bake for 20-25 minutes until golden.

Mix the Tuna Salad
In a mixing bowl, combine the drained tuna, mayonnaise, chopped dill pickles, fresh dill, red onion, salt, and pepper. Stir until well combined.

Assemble the Tuna Melt
Slice the focaccia bread into halves. Spread a generous amount of tuna salad on the bottom half, layer with tomato slices, romaine lettuce, house pickles, American cheese, and cheddar cheese. Top with the other half of the focaccia.
