Crust Preparation

Make the Crust
In a large bowl, mix the all-purpose flour and salt. Cut in the cold unsalted butter until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, until the dough comes together. Shape into a disk, wrap in plastic, and refrigerate for 30 minutes.

Pre-bake the Crust
Preheat the oven to 375°F (190°C). Prick the bottom of the crust with a fork, line with parchment paper, and add pie weights. Bake for 15 minutes, then remove weights and parchment and bake for an additional 5 minutes until lightly golden.

Cook the Bacon
In a skillet over medium heat, cook the hickory bacon until crispy. Remove and drain on paper towels. Once cooled, crumble the bacon into small pieces.

Mix the Egg Mixture
In a large bowl, whisk together the eggs and heavy cream until well combined. Stir in the crumbled bacon, sautéed vegetables, cheddar cheese, Swiss cheese, and goat cheese.
Assembly and Baking

Combine and Bake
Pour the filling mixture into the pre-baked crust. Bake in the preheated oven for 35-40 minutes or until the filling is set and the top is golden.

Cool and Serve
Remove the quiche from the oven and let it cool for about 10 minutes before slicing. Serve warm or at room temperature.

Cook Sausage Patties
In another skillet, cook the house sausage patties according to package instructions until browned and cooked through.

In a large bowl, combine mixed greens with pickled red onion, tossing gently to combine. Drizzle with olive oil and vinegar if desired.
