    Wash and Cut Potatoes

    Wash the Russet potatoes thoroughly under cold water to remove any dirt. Pat dry with a towel. Cut each potato into thin strips, about 1/4 inch thick.

    Soak Potatoes

    Place the cut potato strips into a large bowl of cold water. Soak the potatoes for at least 30 minutes. This helps to remove excess starch, resulting in a crispier fry.

Cooking

    Heat the Oil

    In a large, heavy-bottomed pot or deep fryer, pour in the vegetable oil. Heat the oil to 350°F (175°C) over medium-high heat. Use a thermometer to check the temperature.

    Dry the Potatoes

    After soaking, drain the potatoes and lay them out on a clean kitchen towel. Pat them dry to remove as much moisture as possible.

    Fry the Potatoes

    Carefully add a handful of the dried potato strips to the hot oil, being cautious not to overcrowd the pot. Fry for about 5-7 minutes or until golden brown and crispy. Use a slotted spoon to remove the fries and drain them on paper towels.
