Salad Preparation

Prepare the Mixed Greens
Rinse the mixed greens under cold water and dry them using a salad spinner. Place the greens in a large bowl.

Prepare the Chioggia Beet
Peel and slice the Chioggia beet into thin rounds. You can roast or steam the beet for about 20 minutes until tender, then let it cool and slice.

Prepare Delicata Squash Seeds
If using raw seeds, rinse and dry them. Toast the seeds in a skillet over medium heat for about 3-5 minutes until lightly golden and fragrant.
Beet Vinaigrette Preparation

Make the Beet Vinaigrette
In a blender, combine the cooked beetroot, olive oil, red wine vinegar, honey, salt, and pepper. Blend until smooth and creamy.
Orange Preparation

Supreme the Orange
Using a sharp knife, cut the top and bottom off the navel orange. Carefully slice away the peel and white pith. Cut between the membranes to release the orange segments.
Herbed Goat Cheese Preparation

Prepare the Herbed Goat Cheese
In a small bowl, mix the goat cheese with fresh herbs, olive oil, and salt until well combined. You can also use a fork to create a creamy texture.

Dress the Salad
Drizzle the beet vinaigrette over the salad and toss gently to combine.

Top with Goat Cheese
Crumble the herbed goat cheese over the top of the salad just before serving.
