Prepare the Crust
Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs and granulated sugar. Melt the unsalted butter and pour it into the crumb mixture. Mix until well combined.

Form the Crust
Press the mixture evenly into the bottom of a 9-inch springform pan. Make sure to pack it tightly to create a solid base. Bake in the preheated oven for 8-10 minutes until set and lightly golden. Remove from the oven and let it cool.

Prepare the Filling
In a large mixing bowl, beat the cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes. Gradually add the granulated sugar and continue to mix until well combined and fluffy.

Add Remaining Ingredients
Add the sour cream and vanilla extract to the cream cheese mixture, mixing until smooth. Next, add the eggs one at a time, mixing on low speed after each addition until just combined. Do not overmix.

Pour into Crust
Pour the cheesecake filling over the cooled crust in the springform pan, smoothing the top with a spatula.

Bake the Cheesecake
Bake the cheesecake in the preheated oven at 325°F (160°C) for 50-60 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.

Chill the Cheesecake
After 1 hour, remove the cheesecake from the oven and let it cool at room temperature for another hour. Then, refrigerate for at least 4 hours, or overnight, before serving.

Serve
Once chilled, carefully remove the sides of the springform pan. Slice the cheesecake and serve it as is or with your favorite fruit topping.
