Braised Pork Belly

Prepare the Pork Belly
Preheat your oven to 300°F (150°C).

Mix the Braising Liquid
In a large oven-safe pot, combine soy sauce, brown sugar, minced garlic, minced ginger, and water. Stir until the sugar dissolves.

Braise the Pork Belly
Place the pork belly into the pot, ensuring it is submerged in the braising liquid. Cover the pot with a lid and braise in the preheated oven for 2.5 to 3 hours, or until the pork is tender.

Cool and Slice
Once tender, remove the pork belly from the oven and let it cool slightly. Slice into thick pieces for sliders.
Apple-Pear-Cabbage Slaw

Prepare the Slaw
In a large bowl, combine julienned apple, pear, and finely shredded cabbage.

Make the Dressing
In a small bowl, whisk together the orange zest, rice vinegar, honey, salt, and pepper.

Combine Slaw and Dressing
Pour the dressing over the slaw mixture and toss to coat evenly. Let it sit for about 15 minutes to allow the flavors to meld.

Mix the Sauce
In a small bowl, mix together sriracha sauce, mayonnaise, and lime juice until well combined. Adjust the spiciness according to your taste.
Assembly

Assemble the Sliders
On each slider bun, place a slice of braised pork belly, followed by a generous scoop of apple-pear-cabbage slaw, and drizzle with siracha-crack sauce. Top with toasted sesame seeds.

Close the slider with the top bun and serve immediately while warm.
