For the patties

Form and season patties
Divide the ground beef into four even portions (about 4 oz each). Gently form into patties about 3/4 inch thick and slightly wider than the buns, making a shallow dimple in the center of each patty. Season both sides with salt and black pepper and brush or rub with Worcestershire sauce.

Cook patties
Heat a heavy skillet or cast-iron pan over medium-high heat and add 1 tablespoon vegetable oil, or preheat a grill to medium-high. When hot, add patties (don’t overcrowd). Cook for 3-4 minutes per side for medium (adjust time for desired doneness). If using a skillet, press down slightly for good crust. For the last minute of cooking, place cheese slice on each patty and cover pan or close grill lid to melt cheese.

Cook bacon
While patties rest, cook bacon in a skillet over medium heat until crisp, about 6–8 minutes, turning occasionally. Transfer to paper towels to drain. Break strips in half if needed to fit buns.

Assemble bacon cheddar
Place cooked cheddar-topped patty on the bottom bun and top with 2 bacon slices (or enough to cover), then proceed with lettuce, tomato, onion, pickles and condiments as desired.
Mushroom Swiss topping

Sauté mushrooms
Slice mushrooms. In a skillet over medium heat, melt 1 tablespoon butter. Add mushrooms in a single layer and cook undisturbed 3–4 minutes until golden. Stir, add minced garlic and thyme, cook 1–2 minutes until fragrant and mushrooms are tender. Season with a pinch of salt and pepper.

Prepare produce
While proteins cook, slice tomato into 1/4-inch rounds and cut onion into thin rings. Wash and dry lettuce leaves. Set pickles within reach.

Toast buns
Spread about 1/2 tablespoon butter on cut faces of each egg bun. Toast in a hot skillet (or on grill) buttered-side down 1–2 minutes until golden and slightly crisp. Keep warm.

Assemble burger
On each toasted bottom bun place lettuce leaf, tomato slice, the prepared patty (with bacon-cheddar or mushroom-Swiss toppings), onion rings and pickles. Spread condiments on top bun if desired and close burger. Serve immediately.
Fries

Cook fries
For frozen fries: follow package instructions (bake or fry) until crisp and hot. For fresh fries: heat vegetable oil in a deep pot to 325°F (163°C). Blanch cut potatoes in batches 3–4 minutes until soft but not colored; remove and drain. Increase oil to 375°F (190°C) and fry again until golden and crisp, about 2–3 minutes. Drain on paper towels and sprinkle with salt to taste.

Serve fries
Plate fries alongside burgers and provide ketchup or other dipping sauces as desired.
