Prepare the Marinade

    Blend Marinade Ingredients

    In a bowl, combine olive oil, minced garlic, ground cumin, ground coriander, paprika, salt, black pepper, and lemon juice. Mix well until combined.

Marinate the Meats

    Marinate Chicken Thighs

    Place the chicken thighs in a large resealable bag or bowl. Pour half of the marinade over the chicken, making sure it is well coated. Seal the bag or cover the bowl and refrigerate for at least 1 hour or overnight for best results.

    In another resealable bag, place the lamb chops and pour the remaining marinade over them. Seal and refrigerate for at least 1 hour or overnight.

    In a bowl, mix the ground beef with the remaining marinade until well incorporated. Shape into kofta (oval-shaped meatballs) and refrigerate for at least 1 hour or overnight.

Cook the Meats

    Preheat the grill to medium-high heat. Remove the chicken from the marinade and grill for 6-7 minutes on each side, or until the internal temperature reaches 75°C (165°F).
