Rinse the fresh red chili peppers under cold water. Remove the stems and slice the peppers in half lengthwise. For a milder sauce, remove the seeds.

In a blender, combine the sliced chili peppers, garlic cloves, white vinegar, salt, sugar, and water. Blend on high speed until smooth.

Cook the Mixture
Transfer the blended mixture to a saucepan over medium heat. Bring it to a simmer, stirring occasionally to prevent sticking. Let it cook for about 10 minutes.

Cool and Strain
After 10 minutes, remove the saucepan from heat. Allow the sauce to cool slightly, then strain it through a fine mesh sieve into a bowl to remove any solids. Use a spatula to press down and extract as much liquid as possible.
