Prepare the Filling
In a medium skillet, heat olive oil over medium heat. Add chopped onions and sauté until translucent, about 5 minutes. Stir in ground beef or lamb, cooking until browned. Add rice, parsley, mint, salt, black pepper, and cinnamon. Mix well and cook for an additional 2-3 minutes. Remove from heat and let cool.

Prepare Grape Leaves
While the filling cools, prepare the grape leaves by rinsing them under cold water and laying them flat on a clean surface. If they are too salty, soak them in water for 10-15 minutes.

Stuff the Leaves
Take one grape leaf, shiny side down, and place about 1 tablespoon of filling at the base of the leaf. Fold the sides over the filling and roll it tightly from the bottom to the top. Repeat this process with remaining leaves and filling.

In a large pot, arrange the stuffed grape leaves seam side down. Combine vegetable broth and lemon juice, then pour over the grape leaves until they are just covered. Place a plate on top to keep them submerged and bring to a boil. Reduce heat and simmer for 45 minutes until rice is tender.
