Prepare the phyllo dough
Thaw the phyllo dough in the refrigerator overnight or at room temperature for a few hours. Unroll and keep it covered with a damp cloth to prevent it from drying out.

Preheat the oven
Preheat the oven to 350°F (175°C).

Melt the butter
In a saucepan, melt the unsalted butter over low heat. Set aside to cool slightly.
Filling

Combine the filling ingredients
In a mixing bowl, combine the chopped walnuts, chopped almonds, ground cinnamon, and granulated sugar. Mix well until evenly combined.
Assembling the Baklava

Add the nut mixture
Spread a thin layer of the nut mixture over the phyllo layers. Repeat the layering process with 4 more sheets of phyllo, brushing with butter in between.

Continue layering
Continue to layer the nut mixture and phyllo sheets, alternating until all the filling is used. Finish with 8 layers of phyllo on top, brushing each with butter.
Baking

Cut the baklava
Using a sharp knife, cut the baklava into diamond or square shapes. Pour any remaining melted butter over the top.

Bake in the preheated oven for about 45-50 minutes, or until the top is golden brown and crisp.
Making the Syrup

Prepare the syrup
In a saucepan, combine the granulated sugar, water, honey, and vanilla extract. Bring to a boil, then reduce the heat and let it simmer for about 10 minutes.

Cool the syrup
Remove the syrup from heat and let it cool slightly.
Finishing Touches

Pour the syrup over the baklava
Once the baklava is baked, remove it from the oven and immediately pour the cooled syrup evenly over the hot baklava. Allow it to soak for several hours or overnight.

Cut the baklava along the previous cuts and serve. Enjoy your delicious homemade baklava!
