Method

For the Ladyfingers

  1. 1

    Prepare the Ladyfingers

Preheat the oven to 375°F (190°C). Line two baking sheets with parchment paper.

  2. 2

    Mix Dry Ingredients

In a bowl, sift together flour and baking powder. Set aside.

  3. 3

    Beat Egg Whites

In a clean bowl, beat the egg whites until soft peaks form. Gradually add granulated sugar and continue beating until stiff peaks form.

  4. 4

    Combine Mixtures

In another bowl, whisk the egg yolks with vanilla extract until thick. Gently fold in the flour mixture, then fold in the egg white mixture until just combined.

  5. 5

    Pipe Ladyfingers

Transfer the batter to a piping bag fitted with a round tip. Pipe 3-inch long strips onto the prepared baking sheets, spacing them about 1 inch apart.

  6. 6

    Bake

Bake for 10-12 minutes or until lightly golden. Allow to cool completely.

For the Soaking Liquid

  1. 7

    Prepare the Soaking Liquid

In a small saucepan over medium heat, combine Marsala wine, espresso, and sugar. Stir until the sugar is dissolved. Remove from heat and let cool.

For the Mascarpone Cream

  1. 8

    Make Mascarpone Cream

In a large bowl, combine mascarpone cheese, heavy cream, powdered sugar, and vanilla extract. Beat with an electric mixer until soft peaks form.

Assembly and Garnish

  1. 9

    Assemble the Cake

Soak the ladyfingers in the cooled soaking liquid for a few seconds, then layer them in a round cake pan. Spread half of the mascarpone cream over the soaked ladyfingers.

  2. 10

    Repeat Layers

Add another layer of soaked ladyfingers followed by the remaining mascarpone cream.

  3. 11

    Chill

Cover and refrigerate the cake for at least 4 hours or overnight.

  4. 12

    Serve

Before serving, dust the top with cocoa powder and sprinkle with toasted almonds.
