Ravioli Dough

Prepare the Dough
In a large bowl, mix the all-purpose flour and salt. Create a well in the center and crack in the eggs and olive oil. Gradually incorporate the flour into the eggs using a fork until a dough begins to form.

Knead the Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth. Wrap in plastic wrap and let it rest for at least 30 minutes.

Cook the Spinach
In a skillet over medium heat, add a tablespoon of olive oil. Sauté minced garlic until fragrant, then add the fresh spinach. Cook until wilted, about 3-4 minutes. Remove from heat and let cool.

Prepare the Filling
In a mixing bowl, combine the cooked spinach, ricotta cheese, grated Parmesan cheese, salt, and black pepper. Mix well until smooth and set aside.

Roll the Dough
After the dough has rested, divide it into four pieces. Roll each piece out into thin sheets using a pasta machine or rolling pin.

Fill the Ravioli
Place teaspoons of filling about 2 inches apart on one sheet of dough. Moisten the edges with water, then place another sheet of dough on top. Press gently to seal, ensuring no air pockets remain. Cut into individual ravioli shapes.

Make the Sauce
In a saucepan, melt the butter over medium heat. Add the sage leaves and sauté for 2-3 minutes until fragrant. Pour in the heavy cream and bring to a simmer.

Finish the Sauce
Add the grated Parmesan cheese and nutmeg to the cream sauce. Stir until the cheese is melted and the sauce is smooth. Season with salt and black pepper to taste.
Cooking the Ravioli

Cook the Ravioli
Bring a large pot of salted water to a boil. Carefully add the ravioli and cook for 4-5 minutes until they float to the surface. Use a slotted spoon to remove them.

Serve
Plate the cooked ravioli and pour the creamy sage sauce over them. Garnish with additional grated Parmesan cheese and fresh sage leaves if desired.
