Method

Cooking Pasta

  1. 1

    Boil Water

Fill a large pot with water and bring it to a boil over high heat. Add 1 tablespoon of salt to the water.

  2. 2

    Cook Spaghetti

Once the water is boiling, add the spaghetti. Cook according to package instructions until al dente, usually about 8-10 minutes.

  3. 3

    Reserve Pasta Water

Before draining the spaghetti, reserve about 1 cup of the pasta cooking water. This will help adjust the sauce consistency later.

  4. 4

    Drain Spaghetti

Drain the spaghetti in a colander and set aside.

Preparing the Sauce

  1. 5

    Cook Pancetta

In a large skillet over medium heat, add the diced pancetta. Cook until it’s crispy, about 5-7 minutes. Remove from heat.

  2. 6

    Mix Eggs and Cheese

In a bowl, whisk together the eggs and grated Parmesan cheese until well combined. Season with freshly ground black pepper.

Combining

  1. 7

    Combine Pasta and Pancetta

Add the drained spaghetti to the skillet with pancetta. Toss to combine and ensure the spaghetti is coated with the pancetta fat.

  2. 8

    Add Egg Mixture

Remove the skillet from heat and immediately pour the egg and cheese mixture over the hot spaghetti, tossing quickly to coat the pasta without scrambling the eggs.

  3. 9

    Adjust Consistency

If the sauce is too thick, add reserved pasta water a little at a time until the desired creaminess is achieved.

  4. 10

    Serve

Plate the spaghetti carbonara and garnish with chopped parsley. Serve immediately with extra Parmesan cheese on the side.
