Ravioli Preparation

Make the Dough
In a large bowl, combine flour and salt. Create a well in the center, add the egg and olive oil, then mix until a dough forms.

Knead the Dough
Turn the dough onto a floured surface and knead for about 5-7 minutes until it's smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Prepare the Filling
In a separate bowl, mix the lobster meat, ricotta cheese, and a pinch of salt until well combined.

Roll Out the Dough
After resting, divide the dough into four pieces. Roll out each piece into thin sheets using a pasta machine or rolling pin.

Fill the Ravioli
Place small teaspoons of the lobster filling on one sheet of dough, leaving space in between. Moisten the edges with water, then place another sheet on top. Press around the filling to seal.

Cut the Ravioli
Use a pastry cutter or knife to cut out the ravioli. Ensure they are well sealed to prevent filling from leaking during cooking.
Pink Sauce Preparation

Sauté Garlic
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

Add Tomatoes
Pour in the crushed tomatoes, stirring to combine. Let it simmer for 5 minutes.

Incorporate Cream
Reduce the heat to low and stir in the heavy cream. Cook for an additional 3-5 minutes until the sauce is creamy.

Finish the Sauce
Add grated Parmesan cheese, salt, black pepper, and chopped basil. Stir until the cheese is melted and the sauce is well combined.
Cooking the Ravioli

Boil Water
Bring a large pot of salted water to a boil.

Cook the Ravioli
Carefully add the ravioli to the boiling water. Cook for about 4-5 minutes or until they float to the top.

Drain and Serve
Using a slotted spoon, remove the ravioli and add them directly to the pink sauce. Gently toss to coat.
