Method

Choux Pastry Preparation

    Prepare the Dough

    In a medium saucepan, combine the water, butter, sugar, and salt. Heat over medium heat until the butter melts and the mixture comes to a boil.

    Add Flour

    Remove the pan from heat and quickly stir in the flour. Return to heat and cook, stirring constantly, for about 1-2 minutes until the mixture forms a ball and pulls away from the sides of the pan.

    Incorporate Eggs

    Transfer the dough to a mixing bowl. Allow it to cool slightly, then add the eggs one at a time, mixing well after each addition until the dough is smooth and glossy.

    Pipe the Dough

    Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper. Using a piping bag, pipe small mounds of dough (about 1.5 inches wide) onto the prepared baking sheet.

    Bake the Choux

    Bake in the preheated oven for 20-25 minutes until golden brown and puffed. Do not open the oven door during baking. Once done, remove from the oven and let cool completely.

Whipped Cream Filling Preparation

    Whip the Cream

    In a large mixing bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract. Using an electric mixer, whip on medium-high speed until soft peaks form.

    Fill the Puffs

    Once the choux puffs are completely cool, use a small knife to cut a slit in the side of each puff. Pipe or spoon the whipped cream into each puff until filled.

Chocolate Drizzle Preparation

    Melt the Chocolate

    In a microwave-safe bowl, combine the semi-sweet chocolate chips and heavy cream. Microwave in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth.

    Drizzle Over Puffs

    Using a spoon or a piping bag, drizzle the melted chocolate over the filled profiteroles. Allow the chocolate to set slightly before serving.
