Cooking Pasta

Boil Water
In a large pot, bring salted water to a boil.

Cook Spaghetti
Add the spaghetti to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

Reserve Pasta Water
Before draining, reserve about 1 cup of pasta cooking water.

Drain Pasta
Drain the spaghetti and set aside.
Preparing the Sauce

Beat Eggs
In a mixing bowl, beat the eggs and mix in the grated Pecorino Romano cheese and black pepper until well combined.
Cooking Pancetta

Cook Pancetta
In a large skillet over medium heat, add the diced pancetta and cook until crispy, about 5-7 minutes. Remove from heat.
Combining Ingredients

Combine Pasta and Pancetta
Add the drained spaghetti to the skillet with the pancetta and toss to combine.

Adjust Sauce Consistency
If the sauce is too thick, gradually add reserved pasta water until desired creaminess is achieved.
Serving

Plate and Garnish
Serve immediately, garnished with fresh parsley and additional grated Pecorino Romano cheese if desired.
