Dough Preparation

Activate the Yeast
In a small bowl, combine warm water and active dry yeast. Let it sit for about 5-10 minutes until frothy.

Mix the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Create a well in the center and pour in the yeast mixture and olive oil. Mix until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

Let the Dough Rise
Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm area for 1-2 hours, or until doubled in size.

Prepare the Sauce
In a blender, puree the canned San Marzano tomatoes. Season with salt and freshly ground black pepper to taste.

Prepare the Cheese
Slice the fresh mozzarella cheese into thin rounds.
Assembling and Baking

Preheat the Oven
Preheat your oven to the highest setting (usually around 475°F to 500°F or 245°C to 260°C) and place a pizza stone inside if you have one.

Shape the Dough
Once the dough has risen, punch it down and divide it into two equal portions. Shape each portion into a round pizza base, about 12 inches in diameter.

Add Sauce and Toppings
Spread a thin layer of tomato sauce over each pizza base. Place slices of fresh mozzarella evenly on top and scatter fresh basil leaves.

Bake the Pizza
Carefully transfer the pizza onto the preheated pizza stone or baking sheet. Bake for 10-12 minutes, or until the crust is golden and the cheese is bubbling.

Remove the pizza from the oven and drizzle with olive oil. Let it cool for a few minutes before slicing.
