Preparation

    Prepare the seafood

    Clean and prepare all seafood by rinsing under cold water. Peel and devein the shrimp, and slice the calamari into rings. Set aside.

    Prep the broth

    In a saucepan, heat the fish stock or vegetable broth until it is warm. Keep it on low heat throughout the cooking process.

Cooking

    Sauté aromatics

    In a large skillet or deep pan, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

    Add seafood

    Add the fresh fish, shrimp, mussels, clams, chopped clams, and calamari to the skillet. Sauté for 3-5 minutes until the seafood is just cooked through. Remove from the pan and set aside.

    Cook the rice

    In the same skillet, add Arborio rice and toast it for about 2 minutes, stirring frequently until the grains are slightly translucent.

    Deglaze with wine

    Pour in the white wine and stir, allowing it to cook for about 2-3 minutes until mostly absorbed by the rice.

    Add broth gradually

    Begin adding the warm fish stock or vegetable broth one ladle at a time, stirring frequently. Wait until the liquid is mostly absorbed before adding the next ladle. Continue this process until the rice is creamy and al dente, about 18-20 minutes.

    Combine and season

    Once the risotto is cooked, return the seafood mixture to the pan. Stir in the capers and season with salt and black pepper to taste. Cook for an additional 2 minutes to heat everything through.

    Garnish and serve
