Cannoli Shells

Make the Dough
In a large bowl, mix together the flour, sugar, cocoa powder, and salt. Make a well in the center and add the egg, wine, and melted butter. Combine until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth. Wrap the dough in plastic wrap and let it rest for at least 1 hour.

Roll and Cut the Dough
After resting, divide the dough into quarters. Roll out one piece at a time to about 1/8 inch thickness. Cut into 4-inch circles.

Fry the Shells
Wrap each circle around a cannoli tube. Heat oil in a deep pan to 350°F (175°C) and fry the shells until golden, about 2-3 minutes. Remove and drain on paper towels.

Prepare the Filling
In a bowl, combine ricotta cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.

Fold in Chocolate Chips
Gently fold in the mini chocolate chips.

Whip the Cream
In a separate bowl, whip the heavy cream until stiff peaks form. Carefully fold the whipped cream into the ricotta mixture until well combined.
Assembly

Fill the Cannoli Shells
Using a pastry bag, fill each cannoli shell with the chocolate chip filling from both ends until full.

Drizzle and Serve
Drizzle the filled cannoli with raspberry or chocolate sauce before serving.
