Cannoli Shells

Make the Dough
In a large mixing bowl, combine the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Add egg yolks and white wine, mixing until a dough forms.

Knead the Dough
Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for at least 30 minutes.

Roll and Cut the Dough
After resting, roll out the dough to about 1/8 inch thickness. Cut into 4-inch circles using a cookie cutter.

Fry the Shells
Heat oil in a deep pan to 375°F (190°C). Wrap each dough circle around a cannoli tube and seal the edges with water. Fry until golden brown, about 2-3 minutes. Remove and drain on paper towels.
Filling

Prepare the Filling
In a mixing bowl, combine ricotta cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.

Add Chocolate Chips
Fold in the mini chocolate chips gently until evenly distributed.

Fill the Shells
Using a piping bag or a spoon, fill each cooled cannoli shell with the ricotta mixture.
Chocolate Drizzle

Melt the Chocolate
In a microwave-safe bowl, combine semi-sweet chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until melted and smooth.

Drizzle the Chocolate
Drizzle the melted chocolate over the filled cannoli using a fork or a piping bag.
