Base Ingredients

Method

Base Preparation

  1. 1

    Heat the Milk and Cream

In a medium saucepan over medium heat, combine the whole milk and heavy cream. Stir occasionally until the mixture is warm but not boiling.

  2. 2

    Whisk Egg Yolks and Sugar

In a separate bowl, whisk together the egg yolks, granulated sugar, and a pinch of salt until the mixture is pale and slightly thickened.

  3. 3

    Temper the Egg Mixture

Slowly pour about a cup of the warm milk mixture into the egg yolk mixture, whisking constantly to temper the eggs and prevent curdling.

  4. 4

    Combine and Cook

Pour the tempered egg mixture back into the saucepan with the remaining milk and cream. Cook over medium heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon, about 5-7 minutes.

  5. 5

    Add Flavorings

Remove the saucepan from heat and stir in the vanilla extract. If you're making flavored gelato, add your chosen flavoring (chocolate, fruit puree, or Nutella) at this stage.

  6. 6

    Chill the Mixture

Transfer the mixture to a bowl and cover with plastic wrap. Chill in the refrigerator for at least 4 hours, or overnight for best results.

Churning and Freezing

  1. 7

    Churn the Gelato

Once the mixture is chilled, pour it into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

  2. 8

    Freeze the Gelato

Transfer the churned gelato to an airtight container and freeze for at least 2 hours, or until firm.

  3. 9

    Serve and Enjoy

Scoop the gelato into bowls or cones and enjoy your homemade Italian-style gelato!
