Method

Preparation of Bread

  1. 1

    Slice the Baguette

Cut the baguette into approximately 1/2 inch thick slices to create crostini.

  2. 2

    Toast the Bread

Preheat the oven to 200°C (400°F). Arrange the baguette slices on a baking sheet and brush both sides lightly with olive oil. Toast in the oven for about 10-12 minutes or until golden brown and crispy.

Preparation of Toppings

  1. 3

    Sauté the Mushrooms

Clean the button mushrooms and slice them. If using dried porcini mushrooms, rehydrate them in warm water for about 20 minutes, then chop. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

  2. 4

    Cook the Mushrooms

Add the sliced button mushrooms and chopped porcini mushrooms to the skillet. Season with salt and black pepper. Cook for about 8-10 minutes, stirring occasionally, until the mushrooms are softened and golden brown.

  3. 5

    Add Fresh Parsley

Remove the skillet from heat and stir in freshly chopped parsley. Adjust seasoning if necessary.

Assembly

  1. 6

    Top the Crostini

Place a slice of fresh mozzarella on each toasted baguette slice. Spoon the sautéed mushroom mixture generously on top of the mozzarella.

  2. 7

    Serve

Arrange the crostini on a serving platter and serve immediately with any remaining sautéed mushrooms on the side.
