Method
Make the Ravioli Dough
- 1
Prepare the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the eggs. Gradually mix the flour into the eggs using a fork until a dough begins to form.
- 2
Knead the Dough
Transfer the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap the dough in plastic wrap and let it rest for 30 minutes.
Prepare the Cheese Filling
- 3
Mix the Filling
In a bowl, combine the ricotta cheese, grated Parmesan cheese, salt, and black pepper. Mix well until smooth and set aside.
Roll out the Dough
- 4
Roll the Dough
After resting, divide the dough into four pieces. Roll out each piece using a pasta machine or a rolling pin until thin (about 1/16 inch thick).
Assemble the Ravioli
- 5
Form the Ravioli
Place teaspoons of the cheese filling about 1 inch apart on one sheet of the rolled-out dough. Moisten the edges with water, then fold the dough over to form a pocket. Press down to seal, ensuring there are no air bubbles.
- 6
Cut the Ravioli
Use a knife or a ravioli cutter to cut between the pockets to separate the ravioli. Place them on a floured surface or tray.
Make the Red Sauce
- 7
- 8
Add Tomatoes and Seasonings
Stir in the canned crushed tomatoes, dried basil, salt, black pepper, and sugar. Let it simmer for 20 minutes, stirring occasionally.
Cook the Ravioli
- 9
Boil the Ravioli
In a large pot of salted boiling water, carefully add the ravioli. Cook for about 4-5 minutes or until they float to the top. Carefully remove them with a slotted spoon and drain.
Serve
- 10
Plate the Ravioli
In serving plates, spread a layer of red sauce, then top with the cooked ravioli. Spoon more sauce over the top.
- 11
Garnish
Sprinkle with fresh basil leaves and additional grated Parmesan cheese before serving.
