Make the Ravioli Dough

    Prepare the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the eggs. Gradually mix the flour into the eggs using a fork until a dough begins to form.

    Knead the Dough

    Transfer the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap the dough in plastic wrap and let it rest for 30 minutes.

Prepare the Cheese Filling

    Mix the Filling

    In a bowl, combine the ricotta cheese, grated Parmesan cheese, salt, and black pepper. Mix well until smooth and set aside.

Roll out the Dough

    Roll the Dough

    After resting, divide the dough into four pieces. Roll out each piece using a pasta machine or a rolling pin until thin (about 1/16 inch thick).

Assemble the Ravioli

    Form the Ravioli

    Place teaspoons of the cheese filling about 1 inch apart on one sheet of the rolled-out dough. Moisten the edges with water, then fold the dough over to form a pocket. Press down to seal, ensuring there are no air bubbles.

    Use a knife or a ravioli cutter to cut between the pockets to separate the ravioli. Place them on a floured surface or tray.

Make the Red Sauce

    In a saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

Cook the Ravioli
