Method

Cooking the Pasta

  1. 1

    Boil Water

In a large pot, bring 4-6 cups of water to a rolling boil. Add 1 teaspoon of salt.

  2. 2

    Cook Pasta

Once the water is boiling, add the gluten-free spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes.

  3. 3

    Drain Pasta

Reserve 1 cup of pasta water, then drain the spaghetti and set aside.

Preparing the Sauce

  1. 4

    Cook Bacon

In a large skillet over medium heat, add the bacon slices. Cook until crispy, about 5-7 minutes. Remove and chop into bits.

  2. 5

    Cook Sausage

In the same skillet, add the homemade sausage. Cook until browned and cooked through, about 5 minutes.

  3. 6

    Make Sauce Mixture

In a bowl, whisk together the eggs, Parmesan cheese, heavy cream, and black pepper until well combined.

Combining Ingredients

  1. 7

    Combine Pasta and Sauce

Add the drained spaghetti to the skillet with the sausage and bacon. Pour the egg and cheese mixture over the pasta and stir quickly to combine, allowing the residual heat to cook the eggs gently.

  2. 8

    Adjust Consistency

If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is achieved.

Serving

  1. 9

    Plate and Serve

Serve the carbonara immediately, garnished with extra Parmesan cheese and freshly cracked black pepper, if desired.
