Pasta Preparation

    Cook the Pasta

    Bring a large pot of salted water to a boil. Add the gluten-free spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Cook the Bacon

    In a large skillet over medium heat, add the chopped bacon. Cook until crispy, about 5-7 minutes. Use a slotted spoon to transfer the bacon to a paper towel-lined plate.

    Make the Sausage

    In the same skillet, add the ground pork. Break it apart with a spatula and cook until browned and cooked through, about 5-7 minutes. Drain excess fat if necessary.

    Prepare the Egg Mixture

    In a bowl, whisk together the eggs, grated Parmesan cheese, heavy cream, black pepper, and a pinch of salt until well combined.

    Combine Pasta and Sauce

    Lower the heat to low. Add the drained pasta to the skillet with the sausage. Pour the egg and cheese mixture over the pasta, stirring quickly to combine. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

    Add Bacon

    Fold in the crispy bacon and mix well. Taste and adjust seasoning with salt and more black pepper if desired.
