Toast the Bread
Preheat your oven to 400°F (200°C). Place the slices on a baking sheet and toast for about 5-7 minutes or until golden brown and crispy.

Spread Goat Cheese
Once toasted, spread a generous amount of goat cheese on each slice of bread.

Add Garlic and Basil
Finely mince the garlic and sprinkle over the goat cheese. Garnish with fresh basil leaves.
For the Pomodoro Sauce

Prepare Tomatoes
Blanch the tomatoes in hot water for 30 seconds, then transfer to ice water. Peel, deseed, and chop the tomatoes.

Mix the Sausage Ingredients
In a bowl, combine ground pork, fennel seeds, garlic powder, salt, black pepper, red pepper flakes, and chopped parsley. Mix until well combined.

Form the Sausages
Shape the mixture into small sausage links or patties, about 4 inches long.

In a skillet over medium heat, cook the sausages for about 7-10 minutes, turning occasionally until browned and cooked through.
