Cook the Pasta
In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water and drain the rest.

Sauté the Pancetta
While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add the chopped pancetta and cook until crispy, about 5-7 minutes.

Making the Sauce

Add Cream and Cheese
Pour in the heavy cream and bring to a simmer. Gradually stir in the grated Parmesan cheese until melted and the sauce thickens slightly.

Combine Pasta and Sauce
Add the cooked pasta to the skillet, tossing to coat in the sauce. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.
Finishing Touches

Season and Serve
Season the dish with salt and black pepper to taste. Garnish with chopped fresh parsley if desired. Serve immediately.
