Prepare the Strawberries
Wash and slice the fresh strawberries. Mix them with 2 tablespoons of sugar and let them sit for about 30 minutes to macerate.

Make the Biscuit Dough
Preheat the oven to 425°F (220°C). In a large bowl, whisk together the flour, baking powder, baking soda, salt, and 1/4 cup of sugar.

Incorporate Butter
Cut in the chilled unsalted butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Add Buttermilk
Pour in the buttermilk and stir until just combined. Do not overmix.

Shape the Biscuits
Turn the dough onto a floured surface and gently pat it to about 1-inch thickness. Cut out biscuits using a round cutter.

Bake the Biscuits
Place the biscuits on a baking sheet and bake for 12-15 minutes or until golden brown.

Assemble the Shortcake
Once the biscuits have cooled slightly, cut them in half. Place a biscuit half on a plate, add a scoop of vanilla ice cream, top with macerated strawberries, and finish with whipped cream. Cap it with the other biscuit half.
