Prepare the Chicken
In a bowl, combine flour and cornstarch. Dip chicken breasts in buttermilk, then coat with the flour mixture. Let rest for 15 minutes.

Heat vegetable oil in a deep pan over medium-high heat. Fry the chicken for 5-7 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.

In a separate bowl, mix the fried chicken with buffalo sauce until well coated.

Toast the brioche buns lightly. Place the buffalo chicken on the bottom bun, top with slaw (prepared separately) and pickles. Cover with the top bun.
