    Prepare the Red Wine Glace

    In a saucepan, combine the red wine and beef stock. Bring to a boil, then reduce heat and simmer until reduced by half. Set aside.

    Cook the Filet Mignon

    Season the filet mignon with salt and black pepper. In a skillet over medium-high heat, add olive oil. Once hot, add the filet and cook for about 4-5 minutes on each side for medium-rare. Remove from heat and let rest.

    Fry the Shallots

    Thinly slice the shallots. In a small pan, heat oil and fry the shallots until golden brown and crispy. Remove and drain on paper towels.

    Prepare the Mashed Potatoes

    Boil potatoes until tender, then mash with butter, salt, and pepper to taste. Keep warm.

    Cook the Green Beans

    Blanch green beans in boiling water for 3-4 minutes, then transfer to ice water to stop cooking. Serve warm.

    Plate the Dish

    On a plate, place a serving of mashed potatoes, top with the filet mignon, drizzle with red wine glace, sprinkle crispy shallots on top, and serve with green beans on the side.
