Prepare the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Whisk together until well combined. Gradually add the beer or sparkling water, mixing until the batter is smooth. Let it sit for about 10 minutes.

Heat the Oil
In a large, heavy-bottomed pot or deep fryer, heat the oil to 350°F (175°C). Use a thermometer to ensure the oil is at the right temperature for frying.

Batter the Cheese Curds
Dip the cheese curds into the batter, ensuring they are completely coated.

Fry the Cheese Curds
Carefully place the battered cheese curds in the hot oil, a few at a time. Fry until golden brown, about 2-3 minutes. Remove with a slotted spoon and drain on paper towels.

Serve the cheese curds hot, with Baja sauce on the side for dipping.
