Method
Hummus
Prep
Drain canned chickpeas into a bowl and reserve 3 tbsp of the can liquid. For a creamier hummus, remove skins from a portion of the chickpeas by gently pinching each between fingers (optional).
Blend tahini
In a food processor, combine tahini and 1 tbsp lemon juice. Process 30–60 seconds until thickened and slightly paler; scrape down sides.
Add aromatics
Add minced garlic, remaining lemon juice (2 tbsp), ground cumin and salt to the tahini mixture. Pulse to combine.
Finish
With the motor running, drizzle in 2 tbsp olive oil until fully incorporated and hummus is silky. Transfer to a shallow serving dish and use the back of a spoon to create a shallow well in the center.
Beef Shawarma Topping
Marinate
In a bowl, combine yogurt, 1 tbsp olive oil, 1 tbsp lemon juice, minced garlic, 1 tsp cumin, 0.5 tsp coriander, 1 tsp paprika, 0.25 tsp cinnamon, 0.25 tsp allspice, 0.75 tsp kosher salt and 0.25 tsp black pepper. Add thinly sliced beef and toss to coat thoroughly. Cover and refrigerate at least 30 minutes, preferably 2 hours (up to overnight) for best flavor.
Cook beef
Heat a large skillet over medium-high heat until hot. Add a thin film of oil or nonstick spray. Remove beef from marinade, letting excess drip off, and add to the skillet in a single layer (work in batches if needed). Sear, stirring occasionally, until edges are caramelized and meat is cooked through, 4–6 minutes depending on thickness. If there is excess liquid in the pan, increase heat to high briefly to evaporate and let meat brown. Taste and adjust seasoning.
Rest
Remove beef to a plate and let rest 2–3 minutes; this helps juices redistribute and makes it easier to pile on the hummus.
