Lay out a clean work surface and place one spring roll wrapper with one corner pointing toward you (diamond orientation). Keep remaining wrappers covered with a damp towel to prevent drying.
Mix the flour and water to form a thick paste (sealing glue). Place in a small bowl and keep nearby.
Assemble Rolls
Place about 2 heaping tablespoons (roughly 25–30 g) of the chilled cheese filling near the corner closest to you, leaving a 1–1.5 cm border at the edges. Do not overfill — leave room to fold and seal.
Fold the corner over the filling, pull the wrapper snugly to tuck the filling, fold the two side corners inward, and continue rolling to the opposite corner. Brush the final corner with the flour paste and press to seal securely. Repeat with remaining wrappers and filling. You should get about 12 rolls.
Cheese Filling
Combine the diced or shredded mozzarella, cream cheese, grated cheddar, and grated Parmesan in a mixing bowl. Use a spatula to blend until homogeneous but still slightly textured.
Add the chopped parsley, garlic powder, black pepper, salt, and cornstarch. Mix thoroughly until cornstarch is evenly distributed. The cornstarch helps absorb moisture when frying and reduces cheese leakage.
Chill the mixture in the refrigerator for 20–30 minutes to firm up slightly — this makes wrapping easier and reduces risk of bursting while frying. If mixture becomes too soft after chilling, chill longer or place in a shallow container and press to consolidate.
Frying & Finishing
Pour vegetable oil into a deep, heavy-bottomed pan to a depth of about 2–3 cm (enough for shallow-deep frying). Heat oil over medium-high heat until it reaches 175°C (350°F) or a small piece of wrapper sizzles and browns in about 20–30 seconds.
Working in batches of 3–4 (do not overcrowd), gently lower the sealed cheese rolls into the hot oil seam-side down. Fry, turning occasionally, until all sides are evenly golden brown and crisp, 2.5–4 minutes per batch depending on oil temperature and roll size.
If using a deeper fryer with enough oil to fully submerge, fry fully submerged for 2–3 minutes until crisp and golden. Keep an eye for any splitting — reduce heat slightly if exterior browns too quickly before cheese melts.
Serve immediately while the interior is molten and the exterior is crisp. Provide dipping sauces if desired (marinara, sweet chili, or garlic mayo).
