Espresso
Preheat and dose
Preheat the espresso cup by filling it with hot water, then discard the water. Weigh or dose 18 g of freshly roasted, finely ground espresso into a clean portafilter basket.
Tamp and brew
Distribute the grounds evenly and tamp with firm, level pressure. Lock the portafilter into the machine and start extraction immediately. Brew ~36 ml of espresso (single ristretto/short double) aiming for 25–30 seconds extraction time depending on grind and machine. Pull a thick, golden crema.
If using a stovetop espresso maker or Moka pot: use the equivalent amount of grounds and brew to produce about 36 ml of strong espresso; if using Nespresso or pod machine, use the small/espresso setting.
Milk
Purge steam wand
Purge the steam wand for 1–2 seconds to remove condensed water, then wipe it clean with a damp cloth.
Stretch milk (aeration)
Place the pitcher so the steam wand tip is just below the milk surface. Turn on steam and lower the pitcher slightly to introduce a steady thin stream of air for 3–6 seconds until the milk volume increases slightly and you hear a soft hissing sound. Aim for ~10–15% milk expansion (fine microfoam).
Texture and heat
Submerge the wand tip deeper to create a vortex and heat milk to 60–65°C (140–149°F). Turn off steam just before fully reaching the target temperature to allow for carryover. Total steaming time ~20–30 seconds depending on wand strength.
Polish milk
Wipe and purge the steam wand. Tap the pitcher on a counter and swirl the milk to pop any large bubbles and integrate foam into a silky microfoam with glossy appearance and paint-like texture.
If you don't have a steam wand: heat milk to 60–65°C (use a thermometer or stop heating when small bubbles form around the pot edge) then froth vigorously with a handheld frother or whisk to create dense microfoam. You can froth extra 30 ml milk separately to add more foam if needed.
Assemble & Finish
Pour espresso
Pour the freshly brewed espresso into the preheated cup (usually 150–180 ml cup capacity).
Pour milk
Swirl the pitcher to keep milk integrated. Begin pouring from about 3–4 cm above the cup to let milk sink under the crema, then bring the spout closer and pour with a steady, controlled motion to let the microfoam rise and form a 1–2 cm thick foam layer. Aim for roughly equal parts espresso, steamed milk, and foam (about 1/3 each). Total drink volume ~180–200 ml.
Latte art (optional)
To create simple latte art (heart or rosette), move the pitcher closer and use slight wrist motions as you finish the pour to create contrast between crema and foam.
Serve immediately while hot. A proper cappuccino is served hot with a velvety foam layer and should be consumed within a few minutes for best texture.
