Preparation
Make the Choux Pastry
In a medium saucepan, combine water, butter, and salt. Bring to a boil over medium heat. Once the butter has melted, add the flour all at once and stir vigorously with a wooden spoon until the mixture forms a ball, about 1-2 minutes. Remove from heat and let cool for a few minutes.
Incorporate the Eggs
Add the eggs one at a time, stirring well after each addition until fully incorporated. The dough should be smooth and glossy. Stir in the grated comté cheese and black pepper until well combined.
Pipe the Dough
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper. Transfer the dough to a piping bag fitted with a large round tip. Pipe small mounds (about 1 inch in diameter) onto the prepared baking sheet, spacing them about 2 inches apart.
Bake the Gougères
Bake in the preheated oven for 20-25 minutes or until the gougères are puffed and golden brown. Avoid opening the oven door during baking to ensure they rise properly.
Cool and Serve
Remove from the oven and let cool slightly before serving. Enjoy warm or at room temperature.
