Method

Panna Cotta Preparation

    Bloom the Gelatin

    In a small bowl, combine the gelatin powder and water. Stir lightly and let it sit for about 5-10 minutes until it becomes gelatinous.

    Heat the Cream Mixture

    In a medium saucepan, combine the heavy cream, whole milk, and granulated sugar. Heat over medium heat until the mixture is hot but not boiling, stirring occasionally.

    Add Vanilla and Gelatin

    Once the cream mixture is hot, remove it from heat. Stir in the vanilla extract and the bloomed gelatin until fully dissolved.

    Pour into Molds

    Pour the mixture evenly into individual ramekins or dessert cups. Allow to cool at room temperature for about 30 minutes.

    Refrigerate

    Cover the ramekins with plastic wrap and refrigerate for at least 4 hours or until set.

Berry Coulis Preparation

    Cook the Berries

    In a small saucepan, combine the mixed berries, granulated sugar, and lemon juice. Cook over medium heat for about 5-7 minutes until the berries break down and release their juices.

    Blend the Mixture

    Using a blender or an immersion blender, puree the berry mixture until smooth. If desired, strain the coulis through a fine mesh sieve to remove seeds.

    Cool the Coulis

    Let the berry coulis cool to room temperature before serving.

Serving

    Serve the Panna Cotta

    To serve, run a knife around the edge of each ramekin to loosen the panna cotta. Invert onto a plate and drizzle with berry coulis on top.
