Preparing the Marinade

    Make the Marinade

    In a small bowl, mix together olive oil, lemon juice, minced garlic, salt, and black pepper to create the marinade.

    Marinate the Salmon

    Place the salmon fillets in a shallow dish and pour the marinade over them. Ensure the fillets are well-coated. Cover and refrigerate for at least 30 minutes.

Preparing the Vegetables

    Chop the Vegetables

    Wash and chop the zucchini, bell pepper, and asparagus into bite-sized pieces. Leave the cherry tomatoes whole.

    Season the Vegetables

    In a large bowl, toss the chopped vegetables with olive oil, salt, and black pepper until evenly coated.

Grilling

    Preheat the Grill

    Preheat your grill to medium-high heat (about 375°F or 190°C).

    Grill the Salmon

    Remove the salmon from the marinade and place it skin-side down on the grill. Cook for about 5-7 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.

    Grill the Vegetables

    Place the seasoned vegetables on the grill in a grill basket or wrapped in foil. Grill for about 10-15 minutes, tossing occasionally, until they are tender and slightly charred.

Serving

    Plate the Dish

    Once the salmon and vegetables are cooked, remove them from the grill and let them rest for a couple of minutes.

    Serve the grilled salmon alongside the seasonal vegetables. Optionally, drizzle with additional lemon juice before serving.
