Grilled Pork

    Prepare the Marinade

    In a bowl, combine olive oil, garlic powder, paprika, salt, black pepper, and chopped fresh rosemary. Mix well.

    Marinate the Pork

    Rub the marinade all over the pork loin, ensuring it is well coated. Cover and let it marinate in the fridge for at least 1 hour, preferably overnight for better flavor.

    Grill the Pork

    Preheat the grill to medium-high heat. Place the marinated pork loin on the grill and cook for about 25-30 minutes, turning occasionally, until the internal temperature reaches 145°F (63°C).

    Rest the Pork

    Remove the pork from the grill and let it rest for about 10 minutes before slicing.

Yam Sauce

    Cook the Yams

    Peel and chop the yams into chunks. Boil them in a pot of salted water until tender, about 15-20 minutes.

    Make the Sauce

    Drain the yams and return them to the pot. Add coconut milk, lime juice, and salt. Mash everything together until smooth. Stir in chopped fresh cilantro.

    Prepare the Chilli Mixture

    In a blender, combine red chillies, garlic cloves, salt, and water. Blend until smooth.

    Ferment the Chilli

    Transfer the blended mixture to a clean glass jar. Cover with a cloth and let it sit at room temperature for 3-5 days to ferment, stirring daily.
