    Prepare the Plantains

    Peel the green plantains and cut them into thin slices, about 1/8 inch thick.

    Heat the Oil

    In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Chips

    Carefully add the plantain slices to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 3-5 minutes or until they are golden brown and crispy.

    Drain and Season

    Using a slotted spoon, remove the chips from the oil and place them on a plate lined with paper towels to drain excess oil. Immediately sprinkle with salt, paprika, and garlic powder to taste.

Yassa Sauce

    Prepare the Marinade

    In a bowl, combine the chopped onions, minced garlic, lemon juice, mustard, vegetable oil, salt, and black pepper. Mix well.

    Marinate the Protein

    Add the chicken or tofu (if using) to the marinade and let it sit for at least 30 minutes at room temperature or overnight in the refrigerator for best flavor.

    Cook the Marinade

    Heat a large skillet over medium heat. Add the marinated protein along with the marinade and cook for about 15-20 minutes, or until the protein is cooked through and tender.

    Serve

    Serve the Yassa sauce over rice or with the freshly made green plantain chips on the side.
