    Soak Black-eyed Peas

    Rinse the black-eyed peas in cold water, then soak them in water for about 4 hours or overnight until they are soft. This will make them easier to blend.

    Prepare the Vegetables

    Finely chop the onion, bell pepper, and scotch bonnet pepper. Set aside for later use.

    Drain and Blend

    Once the black-eyed peas are soft, drain them and add to a blender along with the chopped vegetables, crab meat, eggs, salt, black pepper, and baking powder. Blend until you achieve a smooth, thick batter.

    In a deep frying pan, heat the vegetable oil over medium heat until hot. You can test if the oil is ready by dropping a small amount of batter into the oil; it should sizzle and rise to the surface.

    Fry the Akara

    Using a spoon, scoop portions of the batter and carefully drop them into the hot oil. Fry in batches, ensuring not to overcrowd the pan. Cook for about 3-4 minutes on each side or until golden brown.
