Chocolate Mousse

Melt the Chocolate
In a heatproof bowl, melt the dark chocolate over a pot of simmering water, stirring occasionally until completely smooth. Remove from heat and let it cool slightly.

Whip the Cream
In a separate bowl, whip the heavy cream and granulated sugar until soft peaks form. Add vanilla extract and mix until combined.

Combine Ingredients
Carefully fold the melted chocolate into the whipped cream until no white streaks remain. Then gently fold in the beaten egg whites until incorporated.

Chill the Mousse
Spoon the mousse into serving glasses and chill in the refrigerator for at least 2 hours until set.
Banana Layer

Prepare the Bananas
Peel and slice the ripe bananas. Drizzle with lemon juice to prevent browning and toss gently to coat.

Layer the Bananas
Once the mousse is set, layer the banana slices on top of the mousse in serving glasses.
Dulce de Leche

Prepare the Dulce de Leche
To make the dulce de leche, place the can of sweetened condensed milk (unopened) in a pot of water. Ensure the can is fully submerged and simmer for 2-3 hours, topping up the water as necessary. Alternatively, you can use store-bought dulce de leche.

Add Dulce de Leche
Allow the can to cool before opening. Drizzle the dulce de leche over the banana layer in each serving glass before serving.
