Method

Sauce Preparation

  1. 1

    Prepare the Green Sauce

In a blender, combine green bell pepper, scotch bonnet pepper, garlic, ginger, and onion. Blend until smooth. If the mixture is too thick, add a little water to help it blend.

  2. 2

    Heat the Palm Oil

In a saucepan over medium heat, pour in the palm oil and let it heat up until it is shimmering, but not smoking.

  3. 3

    Cook the Sauce

Carefully pour the blended mixture into the hot palm oil. Stir well and let it cook for about 10 minutes, allowing the flavors to meld. Add salt to taste.

Cabbage Preparation

  1. 4

    Prepare the Cabbage and Carrot

Shred the cabbage and grate the carrot. Place them in a large mixing bowl.

  2. 5

    Season the Vegetables

Sprinkle salt over the shredded cabbage and grated carrot. Toss to combine and let it sit for about 5 minutes to soften.

  3. 6

    Serve with Green Sauce

Serve the seasoned cabbage and carrot on a plate and drizzle the hot Abunu-abunu green sauce over the top.
